You just provide the license, the users who download your files use the license. Basically a license tells the people what they can do with the assets you provide. For example: Can they use your files in commercial products/games? Can they be modified? Can they be redistributed on other sites? And so on...
There are many predefined licenses available, e.g. the Creative Commons. You can check pretty much any other download on itch.io to see what licenses they use.
You are the content creator and so to protect yourself and your content, it's usually a good idea to state a license people have to follow if they use your content for anything. On itch.io most people use CC0: https://creativecommons.org/share-your-work/public-domain/cc0/

How can these be used, e.g. what license applies? Can these be used in commercial projects? Please specify
I don't know anything about licenses
Licenses are required, else users don't know what they can do with your asset!

Thanks, but I think I'll leave it at that, when I have time I'll do the license thing.
